No refrigeration required? Why limit that?


I also make cheesecake. I would love to be able to sell my products legally. I adhere to the strictest standards to insure that my product achieves a proper internal temperature during the baking process, and, insure that it gets refrigerated to a temperature of at least 34 degrees Fahrenheit, for at least 24 hours before delivery.


We are asking for non-potentially hazardous foods like cookies, cakes, and cupcakes. A cheesecake would fall under the potentially hazardous food category because of the temperature requirements. If you have the kitchen requirements that Kentucky currently has, you can get a license and sell cheesecake. You just cannot do that from a home kitchen that you also cook out of.
